Spicy Tomato Sauce

Spicy Tomato Sauce

This delicious spicy tomato sauce is so popular in our house. It was created after a trip to one of our favourite family friendly Italian restaurants 'Vapiano's'. Being that our closest restaurant is over an hour away, I decided to try & recreate it myself. I serve it with a spinach & ricotta ravioli but left overs work well over grilled chicken breast too. You can make it as spicy or mild as you like but in this house we like it hot! 

Ingredients
3-4 spring onions thinly sliced
2 small red chilli's finely diced
2 cloves of garlic crushed
1 x jar of your favourite store bought boring old pasta sauce (I use Leggo brand Red wine & garlic)
300ml cream
1 x punnet of cherry tomatoes, halved
a good handful of fresh basil

Method
Sauté the spring onion, chilli & garlic over a medium heat until soft, add the jar of sauce & simmer for around 5 mins to allow the flavours to develop. Add the cream & bring back to the simmer. Add the cherry tomatoes & basil.

There you have it. Probably the easiest & tastiest pasta sauce you will ever make.
